In this blog post I will be sharing how to make a healthy and easy to make homemade soup. The soup tastes delicious and will leave you feeling full for a long time. It’s the perfect food to warm you up on a cold winters day.
Fibre is a necessary part of our diets and nutritionists recommend that we should be eating a lot more of it, this soup is the perfect way to get more fibre.
Today I used rainbow carrots to make this soup, the purple carrots in particular gave it a distinct colour. If you prefer a more traditional lentil looking soup then you can just stick with orange carrots.
This is a basic soup recipe so feel free to improvise with whatever vegetables you have in your fridge.
- vegetable oil
- 2 onions
- sweet potato
- white potato
- 200g lentils
- 80g barley
- mixed herbs
- vegetable stock
- Add oil to the pot and add finely chopped onions
- Grate in the carrots, sweet potato and white potato
- Add water, stock, seasoning, lentils and barley
- Cook for approximately 50 minutes and serve
