Simple Soup

In this blog post I will be sharing how to make a healthy and easy to make homemade soup. The soup tastes delicious and will leave you feeling full for a long time. It’s the perfect food to warm you up on a cold winters day.

Fibre is a necessary part of our diets and nutritionists recommend that we should be eating a lot more of it, this soup is the perfect way to get more fibre.

Today I used rainbow carrots to make this soup, the purple carrots in particular gave it a distinct colour. If you prefer a more traditional lentil looking soup then you can just stick with orange carrots.

This is a basic soup recipe so feel free to improvise with whatever vegetables you have in your fridge.

Ingredients:

  • vegetable oil
  • 2 onions
  • carrots
  • sweet potato
  • white potato
  • 200g lentils
  • 80g barley
  • salt
  • pepper
  • mixed herbs
  • vegetable stock

Method:

  1. Add oil to the pot and add finely chopped onions
  2. Grate in the carrots, sweet potato and white potato
  3. Add water, stock, seasoning, lentils and barley
  4. Cook for approximately 50 minutes and serve
